For a healthy breakfast or dessert, Yogurt & Granola Cups with my favorite topping of fruit with honey make it a summer favorite.
I must admit that staying cool in the summer is a challenge in Florida. As long as I have good food that doesn't require an oven and a pool, I can survive 109* degrees. BTW, I always remember it being this warm down here. It's the main reason I always wear a hat but I digress.
One thing is for sure, I get really creative with food during this time because of the oven warming up the house. So today I decided to make Yogurt & Granola Cups which I either top with fresh berries, any fresh fruit of any kind will do, or homemade jam! Which is great for an easy breakfast. So let's get started with the perfect breakfast or dessert for the summer months!
What type of yogurt should you buy?
What kind of yogurt to use seems to be a concern for most people. Here is my rule for picking out the perfect yogurt, no sugar with real ingredients from nature. Most yogurts in the market are labeled this way:
low-fat yogurt - many have food starch and Acidophilus.
plain Greek yogurt - is yogurt that has been strained to remove its whey
non-fat Greek yogurt - is low-fat milk which I do nothing low fat, I do no sugar.
creamy Greek yogurt - this is the same as Greek yogurt
vanilla yogurt - flavors are added and it usually has sugar without the real vanilla bean
Favorite Toppings
I like to add a few toppings to the Yogurt & Granola Cups with are such a delicious treat in the afternoon. Here are some of my favorites.:
- coconut flakes
- berry mix
- dark chocolate
- cacao nibs
- goji berries
- blood oranges
- poppy seeds
The Crust Mixture
The secret to the crust is using dates, and then I can add whatever I want to combine the ingredients to stick together. Here are some of the things that I sometimes use to make the crust:
- pumpkin seeds
- chia seeds
- peanut butter
- crunchy granola
- coconut oil
- chocolate chips
- pure maple syrup
For today's Yogurt & Granola Cups, here are the ingredients that I used for this version. I usually look in my cabinets first to see what I have and it's a great way to use up all the nuts when you don't have enough to do one particular thing.
Crust
- Dates
- Peanut Butter
- Pecans
- Collage Powder
- Chia Seeds
- Oatmeal
- Honey
- Pumpkin Seeds
Center
- yogurt
- lemon juice
- maple syrup
Topping
- Strawberries
- Honey
- Fresh Mint

This can be purchased on Amazon but any rubber mold will do.
How to Make the Yogurt & Granola Cups
Step 1: Mix all the crust ingredients in the food processor until everything begins to combine.
Step 2: Spoon into the mold and press down till flatten.
Step 3: Add the yogurt, lemon, and maple syrup and mix.
Step 4: Spoon on top of the crust and fill the cup.
Step 5: Place in the freezer for 2 to 3 hours or until the cups are hard.
Step 6: Take the Yogurt & Granola Cups out of the mold and top them with fruit and drizzle a little honey. Serve and Enjoy!

Variations
There are so many variations to this dish, the skies are the limit. The only 2 ingredients are dates and yogurt. Then add every nut and berries or any of your favorite flavors to make you want to make the Yogurt & Granola Cups.
Tips And Tricks
- It is best to use rubber molds because they are so easy to peel the mold and have Yogurt & Granola Cups pop out.
- I also used cupcake pans and used liners before I put the mixture inside. The liners make it easier to remove the Yogurt & Granola Cups.
Frequently Asked Questions
Can I make it ahead of time? Yes, you need to make ahead so they are molded by the time it's to time to eat. Takes about 3 hours to mold.
Have Leftovers? I always make extra to keep in the freezer in an airtight container.
