From New York, a family Recipe for Rhubarb Strawberry Pie comes out bubbling from the oven, with a sweet nutty flavor filling dripping onto the flakey crust, only to be topped with a scoop of vanilla ice cream for the perfect bite!
My husband's mom was a big fan of pies and while she is not with us today, her easy recipes live on to be shared.
This is the classic pie that she made in the summer. That one bite of strawberry-rhubarb pie will bring me back to when we pulled out the recipe box to make this delicious dessert. We had just returned from the farmer's market with strawberries and rhubarb and could not wait to make a pie.
Upstate New York has some of the best fresh strawberries and fresh rhubarb that I have ever had during summertime. The farmer markets are filled with fresh produce from May to June.
Living in Florida, we have sweet strawberries from November to April. Most of our fruit comes from other areas during the summer months. I will go to my favorite farmer's market and get bulk when he only charges $1 for each container, then freeze it in plastic bags. Now let's get on with the pie@
Grocery Store Ready-Made Pie Crust for Strawberry Rhubarb pie
If you are like me and don't always have the time to make a crust for a pie, here are a few that I love.

Ingredients Needed For the Strawberry Rhubarb Filling
Here is the list of ingredients that I used for the pie.
Fruit Mixture
- lemon juice
- rhubarb plants
- strawberries
- orange juice, ¼ cup
- orange zest of ½ orange
- unsalted butter
Dry Ingredients
- white sugar
- dark brown sugar
- corn starch
- 2 pie crusts, one for the top and bottom
Topping
- ice cream
- whip cream
Step By Step Instructions
No need for any special equipment to make this easy recipe. Just a bowl, a pot for cooking and a pie pan.
Step 1: In a large bowl, wash and cut the strawberries and rhubarb into bit sizes. Squeeze some lemon juice to keep the strawberries crisp. I do this with all my fruits when cooking. It also helps them to not turning brown.
Step 2: Place the butter, strawberries and rhubarb in a cooking pot on medium heat with the sugar and brown sugar.
Step 3: Add orange juice, orange zest and mix. Let it simmer until the sugar has melted.
Step 4: Cook until liquid has evaporate a little.
Step 5: Mix corn starch with some of the liquid from the pot and mix in a medium bowl. Add a little water if it is to hard to mix, it loosens and look like a thick paste. Mix into the pot on low heat and keep mixing until it thickens. Remove from heat and set aside.
Step 6: Butter the pan and roll out the dough onto the pan. Press down the dough on the edges where needed. Make a design by poking holes with a straw so the pie can vent while it cooks. Fill the pie and place the top layer while sealing the edges together.
Step 7: Make an egg wash with 1 egg and a little water. Brush on top of the pie dough and sprinkle sugar.
Step 8: Heat the oven at 375º degrees for 20 min. Reduce heat to 350º degrees and bake for about 20 minutes more. Keep an eye on the crust until golden brown.
