Nothing says America likes Apple pie but how about Apple Pie Crust Cookies? A simple cookie to make that was inspired by the famous Janie’s Life-Changing Baked Goods Cookies of New York.
One late night as I was working on my blog post and watching Bravo TV in the background, I heard Andy saying. "it was the best cookie in town." My eyes perked up with utter delight and gazed at Andy bragging about this cookie.
I quickly got online to order a batch for myself. Won’t you know the word SOLD OUT was the only thing that you could buy! So I began to do some searching of what people were saying about this incredible cookie.
My disappointment was real but I did not give up and decided to make my own. It was simple enough, a cookie and a pie mixed into one. These cookies are smaller than a mini pie and perfect to be handheld.
So let’s get to it and start making some Homemade Apple Pie Crust Cookies. The first thing that I did was make my own Apple Filling. It’s too easy to make and I can control the sugar so it’s not too sweet.

Sometimes, I may not have the time to make my pie crust so here are some that I buy and love to cook.
- Wewalka Pie Crust, Flaky & Lard Free - 9 oz - Vegan
- Schar Puff Pastry Dough, Gluten Free - 2 pack, 8.8 oz rolls - Gluten-Free
- Immaculate Baking Co Pie Crust - 15 oz box
- Pillsbury Pie Crusts - 2 pie crusts, 14.1 oz
What Ingredients for the Recipe?
Bottom of Cookie
- Apple Filling - homemade or store bought
- Pie Crust - homemade or store bought
( this is the recipe that I use when making homemade pie crust from Martha Stewart - it’s been my favorite so far )
Topping for Cobbler Ingredients
- Butter
- White Sugar
- Flour
- Baking powder
- Whole Milk
- Cinnamon
How to Make Homemade Apple Pie Crust Cookie
I used two pans and a biscuit cutter to shape the dough. When I make any kind of cookies, I usually line the pan with parchment paper. Two pie crusts will make 22 cookies.
Prepare Items
- Preheat the oven at 350º degrees.
- Place the apple filling in a bowl and set aside.
- Line a large baking sheet with parchment paper and set aside.
- In a small bowl, combine the sugar and cinnamon and set aside.
Prepare Cobbler
- Mix the butter, sugar, baking powder and milk for the cobbler on medium.
- Then pour the milk slowly and mix.
- Pour the flour by spoon one at a time and mix until a paste-like consistency.
Prepare Crust
- Working on a floured surface, roll out dough to about ¼" thickness.
- Use a 2-3" biscuit cutter to cut into circles.
- Place cut circles on a baking sheet.
- Spray with butter or brush the dough with butter then sprinkle the sugar and cinnamon mix on top..
Assemble Cookie
- Add a tablespoon full of the apple filling on top of the circle.
- Add a tablespoon of cobbler mix on top and spread a little.
- Place in the oven for about 10-12 minutes and rotate midway.
- Serve with ice cream or a cup of tea. EnJoy!
Variations
I would think that these cookies can be made many different ways and I am committed to try! As of right now the only way I have made them is with apple filling so stay tune!
Storage
These cookies were stored in an airtight container but did not last 3 days! We ate them all but I would say they can last about 3 days but best the same day.
Top Tip
The most important thing about this cookie is not to over fill. It will spill over so just a spoonful not to cover the whole pie crust.

Ingredients
Bottom of Cookie
- 1 ½ cup apple filling recipe for homemade Apple Filling
- 2 pie crust
Topping for Cobbler
- ¼ cup butter soft
- ½ cup sugar
- 1 teaspoon baking powder
- ⅔ cup milk
- ¾ cup flour
- 1 teaspoon cinnamon
Instructions
