    Turkey Avocado Sandwich to Go!

    Packed my Turkey Avocado Sandwich for lunch to spend the day on a bike ride through Dunedin's Pinellas Trail.

    Turkey Avocado Sandwich

    Now that Florida has finally cooled down it is the best weather this time of year. It runs about 60º to 80º degrees during fall and winter on the west coast of Florida.

    Bike Ride

    We ended up traveling the trail which is so popular on the west coast of Florida. Bikers come from all over to travel this path. The Trail was created along a portion of an abandoned railroad corridor, it is a greenspace for walking, jogging, skating, and biking. With a distance of 75-mile from Tarpon Springs, Palm Harbor, Dunedin, Clearwater, Largo, Seminole, Pinellas Park, and St. Petersburg.

    We only did 5 miles because I rode an adult tricycle with a basket in the back. It's not like I could keep up with anyone and almost tipped over! It's a great way to spend the day and enjoy the beauty of Florida with bike rentals along the path.

    Turkey Avocado Sandwich

    For this day, I decided to make one of my favorite sandwiches, inspired by Panera's avocado turkey sandwich. I made it a little healthier so we could have it for lunch. So lets get started so I can share with you how I made this perfect bite!

    Fresh Ingredients Needed

    • Turkey Breast
    • Ripe Avocado
    • Regular Mayo
    • Lettuce Leaves
    • Sea salt & black pepper
    • Cranberry Sauce
    • Gluten-Free Oat Bread 
    • My favorite cheese is goat cheese.

    How to Make Turkey Avocado Sandwich Recipe

    No need for any special equipment to make this easy recipe. a cutting board and knife will do.

    1. Get the 4 slices of bread and place them in a toaster oven or toaster.
    2. Make ¼ think avocado slices and set aside.
    3. Place the toast on the cutting board and spread mayo on the toasted bread.
    4. Add the lettuce leaves to each toasted bread.
    5. Add the avocado slices, add the turkey and on top of the turkey add the cheese slice with 3 pickle slices for each sandwich.
    6. Sprinkle sea salt and black pepper if desired.
    7. In a small bowl with a lid add some cranberry sauce to serve with the sandwich.

    Lean Protein

    Here are some other lean proteins to use for the sandwich.

    • leftover turkey
    • cold cuts such as chicken or turkey
    • leftover chicken breast from last night's dinner
    • deli meat without nitrates unless naturally
    • turkey bacon

    Whole Grain Bread

    Whole grain consumption is associated with a lower risk of several diseases such as diabetes and heart disease. The grain has a high nutritional value which is close to those of casein which is the main protein in milk. Here are some of the bread types that I eat that can be bought at the grocery at the market.

    • Spelt
    • Einkorn
    • Rye
    • Oats
    • Buckwheat
    • Whole wheat bread

    Cheese Anyone?

    There are so many cheeses to choose from that can add so much flavor in a sandwich. Here are my favorite cheeses that I tend to go to:

    • Goat Cheese
    • Gouda cheese
    • Provolone cheese
    • Cream cheese

    No Mayo?

    Can't use mayo? Try the Dijon mustard or my other favorite to put on any sandwich honey mustard.

    Tips And Tricks

    • I always toast my bread if I take it for lunch or on a picnic. It helps to keep it dry and not saggy.
    • Place lettuce on both sides of the bread and meat in the center so not to make the bread soggy if the sandwich is made ahead of time.

    A quick and healthy Turkey Avocado Sandwich filled with lettuce, goat cheese, and fresh avocado slices in the center of oat bread to hold it together for the perfect bite!

    Equipment

    • 1 cutting board
    • 1 cutting knife

    Ingredients
      

    • 6 Turkey Breast slices
    • 1 Ripe Avocado
    • 6 pickles slices
    • 2 tablespoons Regular Mayo
    • ½ cup Lettuce
    • 4 Gluten-Free Oat Bread slices
    • ¼ cup Cranberry Sauce
    • 4 slices goat cheese
    • Sea salt & black pepper if desired

    Instructions
     

    • Get the 4 slices of bread and place them in a toaster oven or toaster.

    • Optional: Add a tooth pick to hold the sandwich together with an oliv on top, remove before to eat. In a small bowl with a lid add some cranberry sauce to serve with the sandwich.
