Turkey Avocado Sandwich

A quick and healthy Turkey Avocado Sandwich filled with lettuce, goat cheese, and fresh avocado slices in the center of oat bread to hold it together for the perfect bite!

Equipment

  • 1 cutting board
  • 1 cutting knife

Ingredients

  • 6 Turkey Breast slices
  • 1 Ripe Avocado
  • 6 pickles slices
  • 2 tablespoons Regular Mayo
  • ½ cup Lettuce
  • 4 Gluten-Free Oat Bread slices
  • ¼ cup Cranberry Sauce
  • 4 slices goat cheese
  • Sea salt & black pepper if desired

Instructions

  • Get the 4 slices of bread and place them in a toaster oven or toaster.

  • Make ¼ think avocado slices and set aside.
  • Place the toast on the cutting board and spread mayo on the toasted bread.
  • Add the lettuce leaves to each toasted bread.
  • Add the avocado slices, add the turkey, and on top of the turkey add the cheese slice.
  • Sprinkle sea salt and black pepper if desired.
  • Optional: Add a tooth pick to hold the sandwich together with an oliv on top, remove before to eat. In a small bowl with a lid add some cranberry sauce to serve with the sandwich.

Notes

I always toast my bread if I take it for lunch or on a picnic. It helps to keep it dry and not soggy.
Place lettuce on both sides of the bread and meat in the center so as not to make the bread soggy if the sandwich is made ahead of time.
