United States, Recipe from Utah! A cool and refreshing Pineapple Summer Cocktail for the summer. It’s simple to make but also gluten-free and vegan with no-sugar added.

I discovered this cocktail from my trip to Utah at Zest Kitchen & Bar. Somethings sticks to my taste buds and become a special memory from my trip. We had it for brunch and both Jeff and I loved it, which is not always the case with cocktails. He likes them sweet and I like them bitter and hate anything sweet as a cocktail.

So here we go, let me share with you one of my favorite things that I discovered in Utah! This Pineapple Summer Cocktail will make any heat wave feel cooler, especially when we are approaching the end of summer. So let's get ready for Labor Day weekend!

How to Make a Pineapple Summer Cocktail 

  1. Pour a cup of ice into the mixer.
  2. Take your pineapple and place into the mixer.
  3. Pour the honey into the mixer.
  4. Pour the sparkling water into the mixer
  5. Pour the rum or vodka into the mix.
  6. Shake into a frosty beverage and pour into a glass.
  7. Top with mint leaves.

Variations

I have tried different fruit this summer and it has worked very well with strawberries and blueberris. I also loved watermelon which have been so sweet from the farmers market.

Ways to Serve

When summers are hot and all you need is a refreshing drink with a few snacks for an afternoon get together, I am for cheese and crackers. I also keep it light with cucumber sandwiches and cut the crust. It's a hit every time and a fruit salad to make for a colorful patio table.

Tip

Because it has been such a hot this summer, I make a big batch and keep it in the freezer. Then I will place it on the mixer when it's time for refills. That way I always have a nice cool frosty drink for a refill. This cocktail is so easy to make and perfect for family and friends. Don't forget, drink responsibly!

Ingredients
  

  • 2 cups ice cubes
  • 1 cup pineapple, diced
  • ¼ cup honey
  • 1 cup sparkling water
  • ¼ cup vodka or rum
