Low-Carb Egg Breakfast {France}

Recipe from France! A quick and easy Low-Carb Breakfast from France is so easy to make. I remember thIs Low-Carb Breakfast which the French translation is Oeufs en Cocotte. 

This breakfast is very popular for a French Christmas breakfast.In America we love to have our eggs in the morning but not in France. The common daily breakfast is coffee and a croissant.

Let's not forget the baguette with butter and jam, which is also a breakfast favorite. Yet when Christmas morning comes around and the coffee is brewing I will be making one of my favorites, to remind me of my Christmas Breakfast in France.

This low-carb breakfast is so simple to make and sometimes I will make it for dinner with a salad. It's low - carb and gluten-free so it fits right into my diet without giving up anything!

How to Make this Low-Carb Breakfast with Eggs 

  1. Preheat oven to 350º degrees
  2. Butter 4 ramekins
  3. Chop your spinach and place a handful in the ramskin
  4. Cut the goat brie into small squares
  5. Sprinkle olive oil on top and season with salt and pepper
  6. Pour a 2 tablespoon of half and half on top.
  7. Crack an egg into each ramekin.
  8. Add the ramekins to a baking pan and fill the pan with boiling water half way up to the ramekins.
  9. Bake the egg until the whites are just set and the yolks are soft and runny
  10. Depending on your oven, this should take about 10 to 15 minutes.

There are many variations for this Quick Low-Carb Egg Breakfast which can be made with different vegetables

  • leeks
  • kale
  • tomatoes
  • onions

Ways to Serve

I always serve a glass of fresh squeezed orange juice and black coffee with any breakfast. With this Quick Low-Carb Egg Breakfast, I will slice tomatoes, avocado and place them on a plate with a little olive oil on top.

Tip

Check the eggs so you cook them to your liking. Jeff does not like a runny egg so I cook his longer and I take my out sooner. Check your egg top after 7 minutes so you don't over cook.

Ingredients
