    French Country Style Tomato Basil Soup

    Tomato Basil Soup

    French Recipe! I brought back a French Country-Style Tomato Basil Soup Recipe that was given to me while on my vacation in France. Some people collect stamps, I collect recipes wherever I go and had to have this one as a memory.

    Tomato Basil Soup
    To me, it's like taking a picture for your taste buds to remember your travel adventure. French Country-Style Tomato Basil Soup Recipe is light and healthy but so easy to pull off without much cooking skills needed on this one. Sometimes simple is the best way to cook a healthy dish.

    Step by Step - French Country-Style Tomato Basil Soup

    1. Heat the oil over medium heat in a large, heavy soup pot.
    2. Add the chopped onion. Cook, stirring often, until tender, about five minutes.
    3. Stir in the garlic and a generous pinch of salt.
    4. Cook, stirring for about 30 seconds to a minute.
    5. Add the tomatoes, sugar, basil sprigs or leaves.
    6. Cook, stirring often, until the tomatoes have cooked down and smell fragrant, 15 to 20 minutes.
    7. Add the water and vegetable bouillon.
    8. Bring to a simmer, cover and reduce the heat to low.
    9. Simmer 15 minutes.
    10. Puree in a blender in small batches, taking care to place a towel over the top of the blender and hold it down tightly.
    11. Return to the pot, add pepper to taste and adjust salt.
    12. Serve garnished with slivered basil leaves on top

    Variations

    One of things that I like to do with different soups with a thick base such as French Country-Style Tomato Basil Soup add one or more of the following.

    • green beans
    • lima beans
    • peas
    • spinach
    • kale

    Ways to Serve

    I make this soup with none other grill cheese sandwich for Jeffrey. Nothing like blending French soup with the American Classic of grill cheese sandwich.

    Tip

    I love making this during the week because it's so easy. It so easy to make year round and for dinner after along work week.

    • Toasted croutons on top that can be made with French bread.
    • I also love toasting up some cornbread for the top.
    • The best thing to serve with this soup is crusty French bread.
    • I also love to have some peptis to sprinkle on top

    Ingredients
      

    • 1 tablespoon extra virgin olive oil
    • 1 small onion chopped

    • 1 28-ounce can chopped tomatoes with juice
    • 1 tablespoon sugar
    • 2 large sprigs basil chopped plus 2 tablespoons slivered basil for garnish
    • 1 cup water
    • 2 tablespoon vegtable bouillon
    • Salt & Pepper
