Recipe from Upstate New York! A creamy full of flavor Homemade Mac and Cheese that is so easy to make for a Sunday dinner. We love to make this cheesy goodness that curls right into the macaroni.
This recipe is from Jeff's childhood which his mom made this for her boys on many occasions. So when I asked Jeff what he would like for dinner while we are stuck at home, he wanted comfort food that would make him happy. So I did his mom's recipe that she gave me a few years back.
The funny thing is his mom got it from her neighbor, so this Mac & Cheese comes from Kingston, New York and today it has been passed down for all of you to enjoy.
Traditional American Dish
Homemade Mac and Cheese is a traditional dish in America and one that people will make from scratch during the holidays. For many Homemade Mac and Cheese is considered a meal and not a side dish. This is definitely on the top 10 foods in American cuisine.
The Ingredients
I alway need a list of my ingredients for my shopping during the week,
- elbows macaroni
- butter 1 stick
- medium onion
- salt
- pepper
- flour
- Monterey Jack
- Swiss Cheese
- milk
- bread crumbs
How to Make Homemade Mac and Cheese
The is a very easy dish to make and will freeze well for 3 months. I will make extra this time of year so I can freeze for a quick dinner at night.
• Cook Macaroni by package instructions on the box.
• Melt butter on medium heat and stir in the chopped onion until tender.
• Stir in flour over low heat until smooth and bubbly.
• Stir constantly for about 5 minutes until it gets a little thick.
• Stir in milk for about 1 minute.
• Stir in cheese until melted.
• Place in 2 ½ quart glass casseroles or 6 ramekins
• Stir in the mixture and sprinkle bread crumbs on top.
• Bake at 375º degrees, for about 45 minutes until golden brown on top.
• I like to add a little salt and pepper at the top so the flavor of cheese is enhanced.
Variations
I chance this Mac and Cheese sometimes with dressing it up with peas and bacon bits, its a game changer!
Top Tip
One of the things that I do when mixing the cheese I constantly mix so it doesn't stick and I do the same with the flour and butter, I always start with a low to medium heat so it's easier to mix with out burning the bottom.
Ways to Serve
We tend to have a salad with this dish or my husband favorite, broccoli, yes he loves it and this is probably his favorite combo when I make it. I don't serve meat with this dish because it already has protein with the cheese. I will add a more vegetables as sides instead.

Homemade Mac and Cheese
Ingredients
- 1 pound elbows marcaroni
- ½ cup butter 1 stick
- 1 medium onion
- 1 teaspoon salt
- ½ teaspoon pepper
- ⅓ cup flour
- 12 oz Monterey Jack
- 12 oz Swiss Cheese
- 1 cup milk
- ¼ cup bread crumbs
Instructions
- Cook Macaroni by package instructions on the box.
- Melt butter on medium heat and stir in the chopped onion until tender.
- Stir in flour over low heat until smooth and bubbly.
- Stir constantly for about 5 minutes until it gets a little thick.
- Stir in milk for about 1 minute.
- Stir in cheese until melted.
- Place in 2 ½ quart glass casseroles or 6 ramekins
- Stir in the mixture and sprinkle bread crumbs on top.
- Bake at 375º degrees
- I like to add a little salt and pepper at the top so the flavor of cheese is enhanced.
Notes
- Cook the macaroni until it is almost done so it's not too soft.
- It will finishing cooking in the oven.
- I like to add more salt at the end to bring out the flavors.
