Mexican Recipe! How to Make Mexican Stuff Peppers for a quick ready meal during the week.
When I got home I decided to go for a treasure hunt in the cabinets to see what I had to make with them. My biggest challenge in the kitchen is always to trying to see what I can make with what I have at home. Some people love to run out for ingredients but that makes me crazy. I try to do groceries once a week and plan my meals. You can always substitute something for something else or leave it out.
I had Greek stuff peppers with a friend about a week ago and got to thinking, why don't I make my version of Mexican Stuff Peppers? We love Mexican food and peppers seem to be the perfect fit. How much do you like Mexican food? Here is what I came up with!
How To Prepare the Peppers
I like to prepare my peppers by cutting the top of the pepper from the top. I like the look of serving it with a little hat on top.
- Cut the pepper from the top.
- Rinse in cold water and remove all the seeds.
- Let dry on a towel so the inside is facing down.
- Once the peppers are dry, place in a glass pan and sprinkle some olive oil inside along with some garlic powder.
Tip
Try buying different colors peppers for a colorful meal setting.
One of the things I always recommend is to cook extra rice and freeze it. You can always pull it out to make stuffings such as the Mexican Stuffed Peppers.
Ways to Serve - Mexican Stuff Peppers
- Use different color peppers for a more festive feel to your meal
- Serve with a green salad with a light vinegar and oil dressing to keep low on calories so you can have a cocktail!
- Make margaritas as you signature drink.
Tip
You can make this in advance and cook the next day. Perfect for left over lunch or the next day.
Mexican Stuff Peppers
Ingredients
- 1 cup rice follow the directions of the package
- 6 peppers
- 1 pound ground beef
- 1 onion chopped
- 2 garlic cloves
- 1 can of black beans
- 1 tomato chopped
- Hand full of parsley chopped
- 1 bag of taco mix
- 1 tablespoon garlic powder
- Salt & Pepper
- 6 peppers sliced top
Instructions
- Put 2 tablespoons of olive oil in the pan and saute the onion, and garlic until tender.
- Put the ground beef with the taco seasoning then add your beans and rice.
- Once everything is mixed together heat for about 10 minutes.
- Cut the top of the peppers and clean out the seeds.
- Drizzle olive oil in the pan and inside the peppers.
- Stuff the peppers with the mixture and place in the oven at 375º degrees for about 30 minutes until the peppers are cooked and a little soft. Serve with some cheese on top. Enjoy!
