    Heirloom Tomato Salad with Cranberry Vinaigrette has the great taste of a cranberry vinaigrette to top it off. Gluten-free, Low-Carb and Vegan salad that is so easy to make.

    Heirloom Tomato Salad with Cranberry Vinaigrette is the last of summer veggies to be had while fall begins to creep up. As I get the last batch of my favorites at the farmers market, I am reminded of fall with the great taste of Olio Tasting Room Cranberry Balsamic Vinegar to make the perfect vinaigrette to top it off.

    I love this time of year with the nights becoming cooler and the leaves changing around us. It's a sign of the holidays to come with a whole new variety of vegetables and fruits to come. The sad thing is  there will be no more Heirloom Tomato Salad with Cranberry Vinaigrette that are so tasty and full of color. So grab them while you can because they won't be around much longer.

    Now that we are eating a bigger vegan diet and seasonal, I try to make the dishes as colorful as possible. Jeff loves the variety of veggies but is surprised to see how I doll them up for dinner. I noticed, I waste nothing in the refrigerator because I can always make vegetable soup or juice when things are starting to go bad.

    Heirloom Tomato Salad with Cranberry Vinaigrette

    WHAT’S IN THE FOOD!

    • Heirloom tomatoes - Organically grown tomatoes tend to be higher in lycopene, a kind of carotenoid that plays a role in the prevention of cancer.
    • Green beans - The fiber content is very high, and it also provides some of your daily protein requirements. They also act as an easy source for acquiring vitamins like A, C, K, B6, and folic acid.
    • Chickpeas -provides you with a vegetarian-friendly source of protein, with each cup of cooked garbanzo beans containing 15 grams.
    • Cucumber - contain an anti-inflammatory flavonol called fisetin that appears to play an important role in your brain health
    • Walnuts - One-quarter cup of walnuts, for instance, provides more than 100 percent of the daily recommended value of plant-based omega-3 fats, along with high amounts of copper, manganese, molybdenum, and biotin

    Ingredients
      

    • 1 red heirloom tomato
    • 1 yellow heirloom tomato
    • 1 purple heirloom tomato
    • 1 cup of green beens cooled
    • 1 cup of chickpeas
    • 1 large cucumber
    • ½ cup of walnuts chopped
    • ½ cup of basil
    • ½ cup of parsley
    • ¼ cup olive oil
    • ¼ cup cranberry vineger
    • Salt and Pepper

    Instructions
     

    • <b> Prepare items</b>
    • Slice your tomatoes in round slices.
    • Crush your chickpea with a folk.
    • Slice cucumber into long matchsticks
    • Mix the olive oil and cranberry vinegar with slat and pepper.
    • <b>Layer Salad</b>
    • Place on slice of red tomato on plate.
    • Spread chickpea.
    • Sprinkle the cranberry vinaigrette
    • Place on slice of yellow tomato on plate.
    • Place green beans on top
    • Sprinkle the cranberry vinaigrette.
    • Place on slice of purple tomato on plate.
    • Place cucumber on top.
    • Sprinkle the cranberry vinaigrette.
    • Place a red tomato and sprinkle chopped walnuts on top.
    • Sprinkle the cranberry vinaigrette.
    • Dash salt and pepper on top.
    • Enjoy!
