Gnocchi and Sausage are the perfect combinations when making an Italian soup. It is the simple ingredients of rustic cooking from the countryside of Italy.
Like many places in Europe, the countryside is filled with farmers that make cheese, grow vegetables, and raise cattle. With that comes traditional food to fill the family table with items that come from the farm.
Savory sausages are always popular and easy to preserve for months which makes them a farm favorite along with the potato gnocchi. The Italian dumpling has to be one of my favorite foods to eat.
It brings me such joy to place my potato dumpling in the soup and watch them rise to the top. That tells me the soup is done and we can now enjoy a little taste of Italy right from my kitchen.

Italy is famous for its pasta and most of all its Catholic faith where the Pope lives today. With a population of over 59 million people and 79% Catholic, it is no wonder the capital of Rome is known as the Roman Catholic Church.
People around the world travel to Italy to explore the history of the Roman Empire, enjoy the beach coast of Positano, and let's not forget the cheese melting on top of pizza. This country's capital, Rome is the 3rd most visited city in Europe.
Now let's get started with an easy weeknight meal so you can make one of my favorite recipes inspired by Italy.
Grocery Store Items
- olive oil
- garlic powder or cloves of garlic
- bay leaf
- parsley
- fresh basil
- red pepper flakes
- chicken broth
- stew tomatoes
- peas
- shredded carrots
- store-bought gnocchi
- hot Italian sausage
- regular onions
- salt and black pepper
How to Make Gnocchi and Sausage Soup
This delicious dinner does not need special tools to make this one-pot meal. All that is needed is a wooden spoon to mix with a large pot but let's not forget a chopping knife and a cutting board.
Step 1: Cut sausage into bite-sized pieces, chop the onions and set aside.
Step 2: In the soup pot on medium-high, add a little olive oil, garlic powder, bay leaf, parsley, and red pepper flakes, and then sauté for about 5 minutes. Drop in the sausage and onions and saute for another 7 minutes until the onions are translucent.
Step 3: Turn down to medium heat and add the chicken stock and stew tomatoes. At this time I would taste it to see if it needs salt or any more spices.
Step 4: Let it simmer on low for about 25 minutes, then add the peas and shredded carrots.
Step 5: Taste the soup first to see if all the flavors have blended together, then add the pre-made gnocchi to the soup.
Step 6: Cook until they are tender gnocchi with an appearance of pillowy gnocchi or the gnocchi floats to the top. Once that happens the soup is done.
Step 7: Serve soup in a bowl with sprinkled basil on top with some crusty bread on the side for a complete meal.
Variations
Here are a few things that can be added instead in the soup
- green bean with white beans
- parmesan cheese sprinkles on top
- baby spinach with turkey sausage instead
Tips And Tricks
I usually saute first with spices because once I can smell the aroma I know to pour the broth and tomatoes. If I do this first it will give the soup a richer flavor that blends together in perfect harmony.
