French tomato and onion salad on toast is a delicious side dish. My godmother's home was filled with heirloom tomatoes in the backyard, blue cheese always in the fridge, and crispy, sweet onions on top of almost everything.

It was always such a joy to visit my godparents in Reims, France. My godmother always looked so elegant, even with an apron in the kitchen. She always wore red lipstick, hair always done, and a spritz of Chanel 5 while dressed in the latest fashion from the streets of Paris, stylish but classic. Yet, she loved to cook, and that was her happy place. When I visited, the crusty bread with a summer salad was always on the lunch menu, and I loved eating her cooking.

When the summer months roll around, few things are more satisfying than a refreshing side dish bursting with flavor. Enter the tomato onion salad on toast, a simple salad that's the perfect side dish for grilled meats, a light lunch, or a vibrant addition to your dinner table.   • 1 tomatoes, halved
  • ¼ cup onion crisps
  • 1 sliced toasted bread

Preparation: Rinse all fresh tomatoes and cucumber under cold running water, then slice them.

Combine: Place tomato, then scrubble blue cheese on top, sprinkle crisp onions on top of the cheese

Make the dressing: Shake together the mustard, honey, lemon, olive oil, salt, and pepper in a jar and spoon on top.
