French Tomato and Onion Salad on Toast

Salad
- ¼ cup blue cheese
- 1 tomatoes halved
- ¼ cup onion crisps
- 1 sliced toasted bread
- Optional: slice carrots or cucumber or your favorite vegetables
Dressing
- 1 tablespoon mustard
- 1 tablespoon honey
- 1 tablespoon lemon
- 2 tablespoons extra virgin olive oil or quality oil
- Sea salt or kosher salt with freshly ground black pepper
Preparation: Rinse all fresh tomatoes and cucumber under cold running water, then slice them.
Combine: Place tomato, then scrubble blue cheese on top, sprinkle crisp onions on top of the cheese
Make the dressing: Shake together the mustard, honey, lemon, olive oil, salt, and pepper in a jar and spoon on top.
Serve: Add some veggies such as cucumbers of carrots, and a slice of toast drizzled on top, it is ready to serve and eat!
- Use good-quality extra virgin olive oil for the most flavorful dressing.
- Always choose ripe tomatoes; they should be firm but slightly soft to the touch.
- This salad is best enjoyed fresh. I don't recommend saving once the dressing has been mixed into any type of salad because it is soggy.
