Winter is coming and the cold air is starting to appear with morning frosty windows on the car. I love this time of year when you start looking at holidays coming around and family and friends wishing you happiness for the season. One of things I remember most is how my mom made this Butternut Squash Soup in the winter time for her family to feel warm and cozy; before we went to sleep we had to finish our soup.
Years later I started doing the same thing, making Butternut Squash Soup soup for the season. I remember the first time I made Butternut Squash Soup and my mother could not believe how good it tasted. I found this recipe years ago from some rinky dinky ad, who know where, but it has been a hit with everyone. My nephew says it’s the best soup and finishes it off with a big piece of bread with butter.
One of the things I love most about fall, is that you begin to stay home, snuggle with a blanket and have a warm bowl of soup with your loved ones. This Butternut Squash Soup is a keeper.
Butternut Squash Soup
Step 1
1 Butternut Squash
1 sweet onion
Chop both items into bite size pieces and throw into crock-pot
Step 2
3 cups of water
2 chicken bouillon
1 teaspoon of salt
Put ingredients in crock-pot and turn it on HI for 4 hours.
Step 3
8oz of cream cheese
Once the crock-pot is done, take the cream cheese in small chunks and throw into the crock-pot. Take your hand held blender and mix until smooth as silk. Viola your soup is complete!
