Lamb with Watercress Salad

I love lamb and when it's on sale I will buy it every time. The secret to any good meat is MARINATE! Now most recipes say over night or 4 to 6 hours but I do it for 2 day when it is lamb.

Cuban Oregano

Marinate the Lamb

2 pieces of lamb shanks steaks (On Sale 2 for $3.95)
3 tablespoon of Olive Oil
1 squeezed lemon (Cost $.50)
1 teaspoon of garlic powder
1 tablespoon of chopped Cuban Oregano (Cost Free - my friends Adriana gave it to me! Thank You)
Salt & Pepper
Put it in a plastic container and back in the fridge it goes for 2 day. Place on a rack and put the oven on for 325 degrees. I cook meat long and low so it becomes tender. Now every ones oven is different so CHECK YOUR MEAT! Mine took about about 45 minutes to cook. I cut a piece and it still had a little pink in the center.
Lamb

Watercress Salad
1 bushel of watercress (Cost $2.99)
1 container of cherry tomatoes (Cost 2 for $5)
½ cup of Almonds

Salad Dressing
¼ of Olive Oil
2 tablespoon of Balsamic Vinegar
Salt and Pepper
watercress

Cost for 2 people: $9.94
I buy certain things in bulk so the price is not included next to item. They are also what I have in the kitchen at all time.
