What is Flanken Beef
When the cattle rib section of beef bones is cut into thin strips of meat with long strips of rib bones, it is known as a flanken cut. When it is thick cut they are called short ribs. Other names for flank ribs are crosscut ribs, Eastern European-style ribs, Hawaiian-style ribs, Jewish ribs, Korean short ribs, or "kosher ribs".
Trip to Grocery Stores
Now you may not have a local butcher in the area but most grocery stores will carry flanken ribs. Here are the items that are needed for this recipe:
- cayenne pepper
- garlic
- soy sauce
- brown sugar or honey
- olive oil
- a strip of beef cut short ribs or flanken cut beef ribs
- green onions
- sesame seeds
- Salt and Pepper
- Ziploc bag for mixing and longer marinade
Prepare Flanken Style Ribs
- Place the flanken ribs on a deep dish and salt on both sides first, then use a small bowl to pour honey, soy sauce, olive oil, cayenne pepper, and garlic.
- Let it sit for at least an hour or overnight.
- Spray oil on a covered aluminum foil.
- Let the ribs drain and add the slices of short ribs to the pan. Keep the remaining marinated to base the ribs when cooking.
- Cook the Flanken ribs for about 15 minutes in a preheated oven at 375º degrees. I will brush some marinate on each side after 10 minutes, then I will turn the base again and grill on the oven and do one side on high until it is caramelized, and then do the same for the other side. >>> Check your oven because they all heat differently
- Remove ribs from the pan add green onions and sesame seeds on top and serve!
Cooking Method
My favorite way to cook these is on the big green egg for about 10 minutes on each side or less but different ways such as the hot grill, gas grill, or charcoal grill but the time will vary for each method of cooking.
Yet on a cold rainy day, the oven will do and it is very easy which is what happened to me today.
Sides for Flanken Ribs Recipe
Now you can serve this dish with white rice or on top of mashed potatoes but I like to eat them with Shishito Pepper that is roasted on a pan and a roasted cauliflower head that I cook in the oven for about 30 minutes with olive oil and garlic seasoning.
Tips And Tricks
A great thing to do for a marinate for a long time is to place the ribs in a Ziploc bag which takes up less room in the refrigerator..
If you would like some sauce to dip, like my husband, just mix the ingredients then add a little cornstarch on low heat in a saucepan until thickens to desire. Let it cool so as not to be too hot for dipping the ribs.
