Chicken Apricot Salad

Chicken
- 1 whole chicken
- 2 bay leaves
- 2 garlic cloves
- 2 chicken bouillon
Mix
- ½ cup of yogurt
- ½ cup of mayo
- 2 Tablespoons of curry powder
- ½ lime squeezed
- Dash of salt and pepper
- ¼ cup of chopped parsley
Mix well in a bowl.
Once the chicken is cooked and cooled off cut into bit size pieces into a bowl.
Mix the wet ingredients together.
Take your chicken and mix everything together in the bowl along with the almonds and apricots.
Taste to see if you need more salt and pepper.
I like to put it on top of a cracker or in my lettuce. ENJOY!
