Sunday Breakfast Brunch with home fries that have a crispy layer on the outside, sausage, and eggs that make a perfect crustless quick, and to finish it off, freshly squeezed orange juice!
Peel the potatoes and cut them into bite sizes, try to make them the same size, wash and dry them.
Drizzle the olive oil in a cast-iron pan and on medium heat. Place the potatoes in the pan and mix around, put the lid on top, and repeat every about 5 minutes
Once the potatoes are almost cooked, remove the lid and raise the heat a little so they can begin to get crispy.
At this time, when potatoes start getting crispy, add some salt. Add more olive oil if they start to stick to the bottom when the potatoes are flipping with the spatula. Adjust heat as needed to not over-crisp.
Turkey Sausage
Add a little olive oil to a cast iron pan on a medium pan. Let it crisp up and saute for about 10 minutes until fully cooked. Grease a pie dish and place the turkey sausage into the pie dish.
Crustless Quiche
Mix the eggs and place them into the pie dish. Spread evenly into the dish.
With a wooden spoon, I make sure the egg mix is evenly distributed. Add the cheddar cheese on top.
Add a little parsley on top and salt and pepper if you like but I do not because my turkey sausage is so flavorful. I only add the dry parley for a little color.
Place the dish in the oven at 360º degrees ( my oven runs low, so check your oven)
It took about 15 to 20 minutes for the crustless quiche to brown a little on top in my oven.
Test the top to make sure it is firm and then remove from the oven. Serve with home fries and fresh orange juice, Enjoy!
Notes
I like to cook the turkey until it's crispy so I let it rest and not move around to much so I get chucks of crisp turkey while I'm cooking on medium heat.
