Yogurt & Granola Cups

For a healthy breakfast or dessert, Yogurt & Granola Cups with my favorite topping of fruit with honey make it a summer favorite.

Ingredients

Crust

  • ½ cup Dates
  • ¼ cup Peanut Butter
  • ¼ cup Pecans
  • 1 tbsp Collage Powder
  • 1 tbsp Chia Seeds
  • 3 tbsp Oatmeal
  • 2 tbsp Honey
  • 2 tbsp Pumpkin Seeds

Center

  • 1 cup yogurt
  • 2 tbsp lemon juice
  • 2 tbsp maple syrup
  • 1 banana any fruit will do

Topping

  • ¼ cup Strawberries
  • 1 tbsp Honey
  • Fresh Mint chopped mint

Instructions

  • Mix all the crust ingredients in the food processor until everything begins to combine.
  • Spoon into the mold and press down till flatten.
  • Add the yogurt, lemon, and maple syrup and mix.
  • Spoon on top of the crust and fill the cup.
  • Place in the freezer for 2 to 3 hours or until the cups are hard.
  • Take the Yogurt & Granola Cups out of the mold and top them with fruits and drizzle a little honey. Serve and Enjoy!

Notes

  • It is best to use rubber molds because they are so easy to peel the mold and have Yogurt & Granola Cups pop out.
  • I also used cupcake pans and used liners before I put the mixture inside. The liners make it easier to remove the Yogurt & Granola Cups.
