Ingredients

Salad

  • 2 Pears peel and sliced
  • 3 cups of Romaine lettuce
  • ¼ cup of chopped walnuts
  • ¼ cup of Pomegranate seeds

Champagne Vinaigrette

  • 1 garlic clove finely chopped
  • 2 tablespoons dijon Mustard
  • ¼ cup champagne vinegar
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ cup extra virgin olive oil

Instructions

Salad

  • Peel and slice your pears.
  • Wash your lettuce and dry in a salad spinner.
  • Chop your walnuts.
  • Arrange lettuce in bowl first then top with pears, walnuts and pomegranate seeds.

Champagne Vinaigrette

  • Whisk together the garlic, mustard, vinegar, lemon juice, honey, salt, and pepper in a large bowl.
  • Slowly whisk in the olive oil until the dressing is emulsified.
  • You can combine all the ingredients in a blender or a food processor and mix until smooth.
  • Pour desired amount on top of your salad. Enjoy!
