Salad
- 2 Pears peel and sliced
- 3 cups of Romaine lettuce
- ¼ cup of chopped walnuts
- ¼ cup of Pomegranate seeds
Champagne Vinaigrette
- 1 garlic clove finely chopped
- 2 tablespoons dijon Mustard
- ¼ cup champagne vinegar
- 2 tablespoons fresh lemon juice
- 2 tablespoons honey
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ½ cup extra virgin olive oil
Salad
Peel and slice your pears.
Wash your lettuce and dry in a salad spinner.
Chop your walnuts.
Arrange lettuce in bowl first then top with pears, walnuts and pomegranate seeds.
Champagne Vinaigrette
Whisk together the garlic, mustard, vinegar, lemon juice, honey, salt, and pepper in a large bowl.
Slowly whisk in the olive oil until the dressing is emulsified.
You can combine all the ingredients in a blender or a food processor and mix until smooth.
Pour desired amount on top of your salad. Enjoy!
