Christmas Popovers

A crispy and fluffy side to go with a traditional Sunday lunch

Ingredients

  • ½ cup milk
  • ½ cup vegetable oil
  • 8 eggs
  • 2 cups flour she says buy the good kind so I guess the more expensive one
  • ½ cup vegetable oil to oil the pan

Instructions

  • Preheat the oven to 450 degrees (I use a thermometer because ovens change, you can buy one for $10 at Target)
  • Oil the muffin pan and put in the hot oven to let the oil heat.
  • Mix ingredients for 15 minutes or until silky and add mixture to the oiled pan.
  • Place in the oven for 15 - 20 minutes until the popovers have risen and are golden brown.

Notes

You can sprinkle powder sugar on top or do a sugar glaze. I enjoy them with a little butter.
Don't use the small muffin but the big ones of 6.
