Christmas Popovers
A crispy and fluffy side to go with a traditional Sunday lunch

- ½ cup milk
- ½ cup vegetable oil
- 8 eggs
- 2 cups flour she says buy the good kind so I guess the more expensive one
- ½ cup vegetable oil to oil the pan
Preheat the oven to 450 degrees (I use a thermometer because ovens change, you can buy one for $10 at Target)
Oil the muffin pan and put in the hot oven to let the oil heat.
Mix ingredients for 15 minutes or until silky and add mixture to the oiled pan.
Place in the oven for 15 - 20 minutes until the popovers have risen and are golden brown.
You can sprinkle powder sugar on top or do a sugar glaze. I enjoy them with a little butter.
Don't use the small muffin but the big ones of 6.
