A healthy Thanksgiving breakfast that will keep you satisfied til the main event!

Ingredients
  • 4 Slices of Toasted Gluten Free Seeded Bread
  • 4 eggs
  • 4 slices of goat cheese
  • 2 cups of chopped kale
  • 1 large sweet potato
  • 2 tablespoon of olive oil
  • 2 teaspoons of garlic salt
  • Salt & Pepper to your preferences
Instructions
  1. Cut up your sweet potato and roast them on a pain with olive oil and seasoning for about about 20 minutes at 400 degrees.
  2. Toast your bread
  3. Take you kale and in a pan pour 1 tablespoon of olive oil and cook for about 2 minutes.
  4. Take your sweet potatoes and kale and mix in a bowl.
  5. Fry your eggs ( make them as you desire, I like them sunny side up )
  6. Take your toast, place the cheese, a spoonful of kale and potatoes and place the egg on top.
  7. Put a little salsa on top or my husbands favorite ketchup. ENJOY!
