Homemade Apple Pie Crust Cookie

Homemade Apple Pie Crust Cookies with an apple pie filling in the center that is topped with cobbler and sprinkled with sugar and spice.

Ingredients

Bottom of Cookie

  • 1 ½ cup apple filling recipe for homemade Apple Filling
  • 2 pie crust

Topping for Cobbler

  • ¼ cup butter soft
  • ½ cup sugar
  • 1 tsp baking powder
  • cup milk
  • ¾ cup flour
  • 1 tsp cinnamon

Instructions

Prepare Items

  • Preheat the oven at 350º degrees.
  • Place the apple filling in a bowl and set aside.
  • Line a large baking sheet with parchment paper and set aside.
  • In a small bowl, combine the sugar and cinnamon and set aside.

Prepare Cobbler

  • Mix the butter, sugar, baking powder and milk for the cobbler on medium.
  • Then pour the milk slowly and mix.
  • Pour the flour, one spoon at a time and mix until a paste-like consistency.

Prepare Crust

  • Working on a floured surface, roll out dough to about ¼" thickness.
  • Use a 2-3" biscuit cutter to cut into circles.
  • Place cut circles on a baking sheet.
  • Spray with butter or brush the dough with butter then sprinkle the sugar and cinnamon mix on top..

Assemble Cookie

  • Add a tablespoon full of the apple filling on top of the circle.
  • Add a tablespoon of cobbler mix on top and spread a little.
  • Place in the oven for about 10-12 minutes and rotate midway.
  • Serve with ice cream or a cup of tea. EnJoy!

Notes

  • The most important thing about this cookie is not to over fill.
  • It will spill over so just a spoonful not to cover the whole pie crust.
