Crispy Salami Caprese Salad

A traditional Italian dish, this Crispy Salami Caprese Salad is quick and easy to make that is low-carb and gluten-free.

Ingredients

  • 2 tomatoes sliced
  • 3 mozzarella balls sliced
  • ½ cup salami
  • ½ cup olives sliced
  • ½ cup parsley chopped or basil
  • ¼ cup pine nuts toasted
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • Dash salt and black pepper

Instructions

Salad

  • Drain 2 mozzarella balls and and wash the tomatoes.
  • Slice the tomatoes and mozzarella and place the sliced tomatoes on the plate first, then the sliced mozzarella.
  • Roast the pine nuts on a pan for about 3 minutes, then remove.
  • Slice the salami and place on the pan, mixing it around on the pan for about 3 minutes, then pour on top of the salad plate.

Toppings

  • Chop parsley or fresh basil leaves and place on top of salad.
  • Pour the pine nuts on top of the salad plate.
  • Drizzle the balsamic glaze and olive oil on top.
  • Dash salt and pepper on top and serve.

Notes

  • Can be made ahead of time just don’t pour the olive oil and vinegar until serving.
  • I prefer to use grind black pepper and Himalayan salt to sprinkle on top of the salad before serving
