Quick Low-Carb Egg Breakfast

Quick Low-Carb Breakfast from France is so easy to make. A traditional breakfast for Christmas morning.

Ingredients

  • 1 tablespoon unsalted butter
  • 1 goat brie
  • 2 tablespoons extra-virgin olive oil
  • 3 cups baby spinach
  • Salt and Pepper
  • 4 eggs
  • ½ cup half and half
  • Freshly shaved Parmesan cheese for garnish on top

Instructions

  • Preheat oven to 350º degrees
  • Butter 4 ramekins
  • Chop your spinach and place a handful in the ramskin
  • Cut the goat brie into small squares
  • Sprinkle olive oil on top and season with salt and pepper
  • Pour a 2 tablespoon of half and half on top.
  • Crack an egg into each ramekin.
  • Add the ramekins to a baking pan and fill the pan with boiling water half way up to the ramekins.
  • Bake the egg until the whites are just set and the yolks are soft and runny
  • Depending on your oven, this should take about 10 to 15 minutes.

Notes

I always serve a glass of fresh squeezed orange juice and black coffee with any breakfast. With this Quick Low-Carb Egg Breakfast, I will slice tomatoes, avocado and place them on a plate with a little olive oil on top.
