Quick Low-Carb Breakfast from France is so easy to make. A traditional breakfast for Christmas morning.

  • 1 tablespoon unsalted butter
  • 1 goat brie
  • 2 tablespoons extra-virgin olive oil
  • 3 cups baby spinach
  • Salt and Pepper
  • 4 eggs
  • 1/2 cup half and half
  • Freshly shaved Parmesan cheese for garnish on top
  1. Preheat oven to 350º degrees
  2. Butter 4 ramekins
  3. Chop your spinach and place a handful in the ramskin
  4. Cut the goat brie into small squares
  5. Sprinkle olive oil on top and season with salt and pepper
  6. Pour a 2 tablespoon of half and half on top.
  7. Crack an egg into each ramekin.
  8. Add the ramekins to a baking pan and fill the pan with boiling water half way up to the ramekins.
  9. Bake the egg until the whites are just set and the yolks are soft and runny
  10. Depending on your oven, this should take about 10 to 15 minutes.
Recipe Notes

I always serve a glass of fresh squeezed orange juice and black coffee with any breakfast. With this Quick Low-Carb Egg Breakfast, I will slice tomatoes, avocado and place them on a plate with a little olive oil on top.
