Preheat oven to 350º degrees
Butter 4 ramekins
Chop your spinach and place a handful in the ramskin
Cut the goat brie into small squares
Sprinkle olive oil on top and season with salt and pepper
Pour a 2 tablespoon of half and half on top.
Crack an egg into each ramekin.
Add the ramekins to a baking pan and fill the pan with boiling water half way up to the ramekins.
Bake the egg until the whites are just set and the yolks are soft and runny
Depending on your oven, this should take about 10 to 15 minutes.
