Cup Cake Mix
- 1 ½ cups flour
- ⅔ cup sugar
- 3 tablespoons cocoa
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup milk
- 5 tablespoons oil
- 1 tablespoon vinegar
- 1 teaspoon vanilla extract
- 1 teaspoon instant dark coffee
Cream Cheese Frosting
- 8 oz low fat cream cheese
- ½ cup of powder sugar
- 1 tablespoon of lemon juice.
Cup Cake Mix
In a 6 muffin cupcake pan, place a cup cake liner in each one.
Combine flour, sugar, cocoa powder, baking powder, soda salt, milk, oil, vinegar, vanilla, and instant coffee.
Stir on high all together until you have a smooth blend.
Bake at 350º for about 18-22 minutes depending on your oven.
Test with a cake tester and see if it's clean.
Let cupcakes cool before frosting.
Buy your favorite sprinkles for topping buy not needed.
Cream Cheese Frosting
Combine cream cheese, powder sugar and lemon juice.
Mix on high for until it is silky looking and well blended.
Place in refrigerator until read to frost cupcakes.
