I know everyday is a day of loving but today you can shut it to the world out loud! I love Valentines Day as much as Christmas. It’s the time of year that “I love you” is all you need.

We don’t go out to dinner but we do have something special and this year I decided to make my own cupcakes instead of running out to get some with a box of chocolate. It’s quick and easy to make jumbo cupcakes.

It’s a simple recipe that I pull out when I want real sugar for a special occasion and Valentines Day is one of them. The cream cheese frosting goes very well with a deep taste of chocolate that is enhance by adding the instant dark coffee. I always keep it around to add to most of my chocolate recipes.


For six jumbo cup cakes when I break  down the cost, it came out to $6.50. So each cupcakes came out to $1.08 verses the $3 to $4 a piece at most places that sell cupcakes. Just another way to save on food cost with out over spending during a time to say, “I Love You.” Not to mention I love dessert when I can have it!

You can add chocolate chips to this recipe or you can add a scope of peanut butter in the middle which I do sometime when I make cupcakes. But I decided to make it with this lemony tasting frosting that I enjoy just with a moist chocolate cupcake. What do you like in your Cupcakes?

Ingredients
Cup Cake Mix
  • 1 1/2 cups flour
  • 2/3 cup sugar
  • 3 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 5 tablespoons oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant dark coffee
Cream Cheese Frosting
  • 8 oz low fat cream cheese
  • 1/2 cup of powder sugar
  • 1 tablespoon of lemon juice.
Instructions
Cup Cake Mix
  1. In a 6 muffin cupcake pan, place a cup cake liner in each one.
  2. Combine flour, sugar, cocoa powder, baking powder, soda salt, milk, oil, vinegar, vanilla, and instant coffee.
  3. Stir on high all together until you have a smooth blend.
  4. Bake at 350º for about 18-22 minutes depending on your oven.
  5. Test with a cake tester and see if it's clean.
  6. Let cupcakes cool before frosting.
  7. Buy your favorite sprinkles for topping buy not needed.
Cream Cheese Frosting
  1. Combine cream cheese, powder sugar and lemon juice.
  2. Mix on high for until it is silky looking and well blended.
  3. Place in refrigerator until read to frost cupcakes.
  4. ENJOY!
