During the holiday season I will make Ham Cheese Quiche for breakfast a day in advance with the leftover ham that I freeze from Thanksgiving. None of your leftovers should go to waste.
I’ll serve it with a bowl of yogurt that’s topped with fruit. I try to buy what’s in season so the yogurt gets topped with granola, chopped pears and a little honey on top. This Ham Cheese Quiche is good for the last minute. Running behind for work just cut a piece of this Ham Cheese Quiche and pop it in the microwave.
Ham Cheese Quiche Lizzie Low Cal Meals
1/2 cup of ham – I usually buy some Honey Baked Ham but any will do.
1/2 onion chopped
4 large eggs
1 cups half-and-half
1 pie crust from the market – I like Mrs. Smith because it always cooks well and never brakes.
- Preheat oven to 350 degrees, with rack in lowest position. In a large skillet, melt olive oil over medium. Add onions and ham, season with salt and pepper. Cook, stirring occasionally, until crisp and tender, 6 to 8 minutes; let cool.
- In a large bowl, whisk together eggs, half-and-half, 1/2 teaspoon salt, teaspoon and pepper. Place pie crust on a rimmed baking sheet. Sprinkle with cheese. Pour egg mixture on top.
- Bake until center of quiche is just set, 50 to 60 minutes, rotating sheet halfway through. Let stand 15 minutes before serving.
