During the holiday season I will make Ham Cheese Quiche for breakfast a day in advance with the leftover ham that I freeze from Thanksgiving. None of your leftovers should go to waste.

I’ll serve it with a bowl of yogurt that’s topped with fruit. I try to buy what’s in season so the yogurt gets topped with granola, chopped pears and a little honey on top. This Ham Cheese Quiche is good for the last minute. Running behind for work just cut a piece of this Ham Cheese Quiche and pop it in the microwave.

Ham Cheese Quiche Lizzie Low Cal Meals

1 tablespoon of olive oil
1/2 cup of ham – I usually buy some Honey Baked Ham but any will do.
1/2 onion chopped
1 cup of low fat mozzarella cheese
4 large eggs
1 cups half-and-half
1 tablespoon of flour
Coarse salt and ground pepper
1 pie crust from the market – I like Mrs. Smith because it always cooks well and never brakes.



  1. Preheat oven to 350 degrees, with rack in lowest position. In a large skillet, melt olive oil over medium. Add onions and ham, season with salt and pepper. Cook, stirring occasionally, until crisp and tender, 6 to 8 minutes; let cool.
  2. In a large bowl, whisk together eggs, half-and-half, 1/2 teaspoon salt, teaspoon and pepper. Place pie crust on a rimmed baking sheet. Sprinkle with cheese. Pour egg mixture on top.
  3. Bake until center of quiche is just set, 50 to 60 minutes, rotating sheet halfway through. Let stand 15 minutes before serving.

You can change out the ingredients to spinach, leeks or asparagus. If you add bacon you will add a lot more calories to the quiche.
