Thanksgiving Breakfast to Prevent Overeating

Ingredients

  • 4 Slices of Toasted Gluten Free Seeded Bread
  • 4 eggs
  • 4 slices of goat cheese
  • 2 cups of chopped kale
  • 1 large sweet potato
  • 2 tablespoon of olive oil
  • 2 teaspoons of garlic salt
  • Salt & Pepper to your preferences

Instructions

  • Cut up your sweet potato and roast them on a pain with olive oil and seasoning for about about 20 minutes at 400 degrees.
  • Toast your bread
  • Take you kale and in a pan pour 1 tablespoon of olive oil and cook for about 2 minutes.
  • Take your sweet potatoes and kale and mix in a bowl.
  • Fry your eggs ( make them as you desire, I like them sunny side up )
  • Take your toast, place the cheese, a spoonful of kale and potatoes and place the egg on top.
  • Put a little salsa on top or my husbands favorite ketchup. ENJOY!
