Ingredients

Cup Cake Mix

  • 1 ½ cups flour
  • cup sugar
  • 3 tablespoons cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup milk
  • 5 tablespoons oil
  • 1 tablespoon vinegar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant dark coffee

Cream Cheese Frosting

  • 8 oz low fat cream cheese
  • ½ cup of powder sugar
  • 1 tablespoon of lemon juice.

Instructions

Cup Cake Mix

  • In a 6 muffin cupcake pan, place a cup cake liner in each one.
  • Combine flour, sugar, cocoa powder, baking powder, soda salt, milk, oil, vinegar, vanilla, and instant coffee.
  • Stir on high all together until you have a smooth blend.
  • Bake at 350º for about 18-22 minutes depending on your oven.
  • Test with a cake tester and see if it's clean.
  • Let cupcakes cool before frosting.
  • Buy your favorite sprinkles for topping buy not needed.

Cream Cheese Frosting

  • Combine cream cheese, powder sugar and lemon juice.
  • Mix on high for until it is silky looking and well blended.
  • Place in refrigerator until read to frost cupcakes.
