Every year we have more then enough turkey leftover for another whole meal. So every year I make my famous turkey pot pie from my turkey leftovers for my family. I only make it once a year because of the turkey leftover and it is not something that I cook except for Thanksgiving. It's a little treat for everyone and when they smell the bubbling turkey pot pie come out of the oven, everyone is ready for dinner without calling them to the table. I make them in individual little ramkins so everyone gets their very own.
Turkey Pot Pie Turkey Leftovers
3 cup turkey, cubed
2 cup chicken broth
½ cup half and half
2 tablespoons butter
1 onion, chopped
2 tablespoons flour
½ teaspoon thyme
10 oz. frozen peas and carrots
1 box of Puff Pastry
1 egg wash
This recipe makes about 6 servings
Preheat oven to 425°F.
Melt butter, and saute onions until golden. Blend in flour and thyme. Cook over low heat for 1 minute. Remove from heat.
Stir in chicken broth and Half & Half. Heat to boiling and boil 1 minute, stirring constantly. Stir in chicken and vegetables. Allow to cool 10 minutes. Pour into little pie pans. Cover the top with puff pastry, and wash with egg so you can get that golden color on the pastry. Make 3 small inserts at the top of each pie.
Bake 35-40 minutes or until golden brown.
Serves 6
