The morning is filled with the smell of fluffy popovers that my mom has made for breakfast. They are as big as your head and melt in your mouth. She has perfected this recipe over the years to master the rise of the popover.
The first thing she says as I walk into the kitchen is DO NOT open that oven. Yes I know it’s all about the oven and the mixing. As she runs around the kitchen for the next batch to go in the oven because the first 36 are not enough. Here is Mom’s Popover recipe that we have enjoyed for breakfast or dinner during Christmas.
- ½ cup of milk
- 1 cup of vegetable oil
- 8 eggs
- 2 cups of flour (she says buy the good kind so I guess the more expensive one)
- Mix for 25 minutes on medium
- Oven should be 450 degrees and it should be at that temperature before you place them in the oven. I use a thermometer because ovens change. You can buy one for $10 at Target. Make sure to oil the muffin pan and fill it ¾ way. Don't use the small muffin but the big ones of 6. You will have 12 big Mom's Popovers when your done. You can sprinkle powder sugar on top or do a sugar glaze. I enjoy them with a little butter.
