Sometimes you want to eat something but not make a whole meal. This salad can be eaten with salad or my favorite is with corn chips. Its the perfect dish to bring to your neighbors BBQ. This is a quick and easy recipe if your needing something last minute and promise it will be a hit where everyone will ask where you got the recipe. This Chicken and Avocado recipe will make your mouth water.
Chicken & Avocado Salad
1/2 Roasted Chicken (buy at the Grocery store to save time)
1 Large Avocado
2 Tbsp of Low Fat Ricotta
3 Tbsp of Low Fat Mayonnaise
1 Tbsp of lemon juice
A handful of parsley
Pinch of salt
Pinch of pepper
Directions: Remove the skin and cut up the chicken in small pieces, then cut up your avocado into squares and place it into a mixing bowl. Chop up your parsley and throw that into the bowl. Take you ricotta, mayo, lemon juice, salt and pepper and mix that into a small bowl. Mix everything together and your done. Serve with lettuce or with corn chips.
